Portabella Pita
1 Package sliced Portabella Mushrooms
1 small onion, sliced
1 medium tomato, sliced
Lettuce
Mozzarella cheese (provolone or Swiss can be used)
Mayo
4 pitas
Heat skillet with spray, butter or oil. Sautee mushrooms 5-6 minutes or until tender, turning occasionally. Onions can also be sautéed at this time if desired. Spread mayo on inside of pocket and fill with mushroom and onions (cooked or raw). Add a slice of cheese, tomato and lettuce.
